High Fibre Banana Bread

Let’s get this bread… banana bread, obviously. You’ve got fibre from bananas, oats, psyllium and flaxseed to support digestion, walnuts for healthy fats that support the microbiome, no refined sugar thanks to the natural sweetness of bananas, and a protein (and multivitamin!) boost from Thriving Family. It’s the easiest way to turn “something sweet” into something that actually does you some good.

  • 3 ripe bananas, mashed
    1 tbsp psyllium husk
  • 1 tbsp flaxseed flour
  • 2 eggs 
  • 1.5 cups rolled oats (blended into flour)
  • ½ cup Thriving Family Smooth Vanilla
  • ¼ cup olive oil
  • ¼ cup walnuts, chopped
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla
  • Pinch of salt
  1. Preheat the oven to 338°F. Line a standard loaf tin with baking paper.
  2. Mash the bananas in a large bowl, then whisk in eggs, olive oil, and vanilla.
  3. In a separate bowl, combine oat flour, Thriving Family Smooth Vanilla, psyllium, flaxseed, cinnamon, baking soda, and walnuts & mix.
  4. Add the dry ingredients to the wet and mix until just combined.
  5. Pour batter into the loaf tin and smooth the top.
  6. Bake for 40–45 minutes, until golden and a skewer inserted comes out clean.
  7. Allow to cool for 15–20 minutes before slicing.
